Lemon Balm Iced Tea

Pair this week’s herb with mint for a relaxing start to the weekend.

Servings: 4 people

Ingredients

  • 1 quart filtered water

  • 8 sprigs fresh lemon balm, plus more for serving

  • 8 sprigs fresh mint, plus more for serving

  • 1 small lemon, sliced

Instructions

  1. Bring the water to a boil in a medium pot. Thoroughly wash the lemon balm and mint and add to the boiling water. Turn off the heat and let the herbs steep for 20 minutes.

  2. Strain the tea into a pitcher and discard the herb sprigs. Add the lemon slices and chill in the refrigerator for at least 3 hours. Serve over ice in tall glasses and garnish with fresh lemon balm and mint. The tea will keep in an airtight container in the refrigerator for up to 5 days.
