Roasted Delicata Squash

Ingredients
Two delicata squash, sliced in half, seeded and cut into 1/2 inch half-moons
2 tablespoons extra virgin olive oil
2 tablespoons maple syrup
Dash of cayenne
1/2 teaspoon coarse salt
1/4 teaspoon black pepper
1/3 cup crumbled feta cheese
Instructions
Slice the squash, season with cayenne, salt, and pepper, and brush with a little olive oil and maple syrup.
Roast at 425°F for 25-30 minutes.
Let cool down slightly before topping with crumbled feta, and a little extra drizzle of olive oil.
Optional toppings: dill or any other bright herb, pomegranate seeds, roasted pepitas, and dried cranberries.
