Roasted Delicata Squash

Recipe

Servings: 4 people

Prep Time: 40 minutes

Ingredients

  • Two delicata squash, sliced in half, seeded and cut into 1/2 inch half-moons

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons maple syrup

  • Dash of cayenne

  • 1/2 teaspoon coarse salt

  • 1/4 teaspoon black pepper

  • 1/3 cup crumbled feta cheese

Instructions

  1. Slice the squash, season with cayenne, salt, and pepper, and brush with a little olive oil and maple syrup.

  2. Roast at 425°F for 25-30 minutes.

  3. Let cool down slightly before topping with crumbled feta, and a little extra drizzle of olive oil.

Optional toppings: dill or any other bright herb, pomegranate seeds, roasted pepitas, and dried cranberries.
